People often talk about good steaks.
They’ll argue for hours over the barbecue about how to cook a good one.
But there’s really not much to it, putting a slab of meat onto a grill and ensuring you turn it at the right time.
The nuance they’re forgetting of course, is whether the steak they’re cooking is a well-chosen piece of beef or not.
And sure, there are plenty of ways to mess it up the cooking process. Nevertheless, doing it the right way really isn’t that difficult.
That all said and done, there’s a real satisfaction in having someone deliver a good cut, timed to perfection, and despite being given the mother of all steak knives, deep down you know that you could really cut this thing open with a butter knife.

Yes, there are others. But you’ll know the team here knows the right time to turn it, and you’ll know that they’ve gone out of their way to get the right cut.
Wagyu for example is expensive, but not always the best cut. I still believe the best judge of a good chef is the one who can make a delicacy from backstrap or chuck.
Go on, Mr Chef. Make my mouth melt with that piece of no-good beef.
Nevertheless, I digress. Fitzy’s, as far as reliable grills goes, offers up well-priced meals. The temptation will be to go for the bigger weight – the rump for example.
However, the eye fillet and rib fillet are the prime offerings of the menu, one at the lower end of the price scale and the other at the top.
They come with fresh coleslaw and jacket potato or chips, and various types of gravy.
The menu isn’t of course limited to steak. There are pastas, some token seafood, and hand-stretched pizza. On the night we were there, they were offering a $20 pizza special – a fire breather.
Had it not been for the steaks – even the steak sandwich passes for a decent piece of beef – the chillies from the pizza would have been burning my plate.
Only a regular would order the lamb shank, schnitzel or spaghetti bolognese. Surely?
