PEOPLE in aged care are not only having their health cared for – they’re being fed the best in culinary delights by teams of dedicated chefs.
Arcare Springwood chef Darrell and assistant Kerry were listed as a finalist in the first culinary competition hosted by The Institute of Hospitality in Healthcare.
The were nominated with a sticky chicken dish on Asian-style slaw.
“We want to get rid of the stigma for aged care that all foods are pureed; here we’re cooking with fresh ingredients and the residents love it. It’s more than a meal, it’s a dining experience,” chef Mario Giordano, who is a member of Arcare’s broader kitchen team, said.
Teams had one month to create a dish that costs under $6.50 to make and follows the nutritional guidelines as approved by a dietitian.
Finals will be at the Brisbane Convention and Exhibition Centre, with a judging panel of industry experts at the September 22 showdown.
Teams will have 20 minutes to set up, followed by 45 minutes to cook and plate their dishes.
“It’s a chance for our very experienced chefs to showcase their food on a professional level; you can see their love and passion for aged care as they deliver high quality meals to our residents,” Arcare support manager for catering services Tim Alexander said.
“And it’s important for family members to know that we are looking after their loved ones with our great culinary options.”
