Owners of one of Logan’s swankiest restaurants has moved into a food truck, but the owners wouldn’t have it any other way.
Husband and wife, Leigh Mitchell and Bec Cobbing, were forced to close their restaurant, The White House of Waterford, due to flood-related complications.
It was an experience that rocked the couple and they grappled with the decision to leave the White House behind.
“It hasn’t been an easy ride,” Ms Cobbing said.
However, the couple’s mobile Italian restaurant – La Casetta Italian Kitchen – debuted with a bang.
Their next few weekends are fully booked with catering jobs – which Ms Cobbing said was their top priority -and the rest of the time they’re at markets in and around Logan.
“We wanted to do something that was a little bit more accessible… like pizza, weddings and things like that,” Ms Cobbing said.
Last week they had their first market job at the opening of the Butter Factory Breakfast Markets at Kingston.
Although the restauranteurs have expanded to the Gold Coast and Brisbane, Ms Cobbing said they would continue to operate in Logan because of their loyal customers.
“We had so many regulars turn up for food at the breakfast market which was so nice,” she said.
And they are planning on diversifying their cuisines.
“We’re hoping to have another [truck] by the end of the year,” she said.
“Different ones as well, so not just Italian.”
Ms Cobbing said fans of the original White House menu need not worry, because some White House classics will be making a come-back at the truck.
La Casetta Italian Kitchen can be found at Distillery Road Market’s Trucks and Tunes, the Butter Factory Breakfast Markets, with semi-permanent residency at the Nosferatu Distillery in Brisbane.
