Colombo Lounge chef Shamal Silva spicing up Aussie classics

New Springwood café, The Colombo Lounge, is marrying the flavours of Sri Lanka with Aussie bistro classics in a fresh fusion menu. 

Signature dishes include a big breakfast, eggs benedict and toasties.

Other items include Sri Lankan hot buttered calamari with garlic toast, Ceylon coconut rice with beef or chicken, Kottu Roti (a popular Sri Lankan street food that’s made of chopped roti with veggies, eggs and either beef or chicken) and desserts such as Nutella Crepes.

Chef Shamal Silva said the new owners were a husband-and-wife duo from Shailer Park with a strong passion for their Sri Lankan heritage.

“The restaurant owners have a passion for really good food, and they are always hosting big parties, sometimes with up to 50 guests. The Colombo Lounge is about their love of bringing people together over food,” he said. 

“As chefs, our love is about creating that food and inviting people to discover a new place to relax and enjoy some delicious, uncomplicated flavours that capture the essence of popular Sri Lankan street food alongside familiar Aussie favourites.” 

Mr Silva said creating dishes was exciting because the café’s fusion flavours were currently not available elsewhere locally.

“In addition to our popular Aussie bistro dishes, we have added some Sri Lankan twists,” he said.

“For example, diners can choose between a classic breakfast burger or a fusion breakfast burger that includes the Sri Lankan condiment seeni sambol, a special onion relish, to try something new.

“Customers can also experience the balance bowl. Perfect for vegans, this is suitable for all tastes as you also have the option to add meat.

“It contains aromatic basmati yellow rice, cashew and pea curry, beetroot curry, green beans, cucumber and pineapple salad and papadums. We call this one a ‘real belly pleaser’ as it is very filling.” 

The Colombo Lounge is open for breakfast and lunch from 8.30am to 4pm on weekdays and from 9am to 2pm on weekends.
